I really like pizzelles. Almost as much as I like madeleines. For quite some time, I've wanted a pizzelle maker. A week ago, SP & I bought one. Last night, we made our first batch of pizzelles. Yum. We decided our first batch should be a basic recipe, so we made vanilla pizzelles (we don't currently have anise extract). The batter is so quick and easy to whip up - flour, sugar, eggs, vanilla, baking powder, & melted butter. It's making only 2 at a time that takes time, although they seem to cook in a minute or less. We even practiced shaping a few into a cannoli shape and a waffle ice cream cup shape. Our first batch is definitely a success - half are gone already!!! I am looking forward to many more pizzelles in many different flavors, some with ice cream, some filled with cannoli filling. So many possibilities!
