Return to Healthier Eating (?)

After a weekend filled with dining out on fried food, pasta, and flatbread; BBQ hot dogs & burgers; then more BBQ -- plus all the munchies (cheese, shrimp, bread...) and all the desserts, we are feeling rather... heavy. That might be a good word. Large? Heck I'll just say it - we think our bellies are getting kind of fat. We will soon be able to pinch an inch.

So it's time to return to our usual, healthier eating -- though CSA brother will likely take issue with our idea of healthier!!! I admire his healthy meals and am sure I could never be that diligent and I certainly could never omit dessert.

Last night I made a plate of sliced tomatoes drizzled with balsamic syrup, sprinkled with fresh chopped basil, tossed on a few leftover black olives, and crumbled a wee bit of leftover Amish cheese over it. Yum!!! SP didn't like the black olives. I agree - Kalamata would be much, much yummier, but we need to use up the plain, boring, black olives. The cheese, not so healthy, but I certainly can't let tasty cheese start to mold! I tried to use a small amount of cheese. Unfortunately, I am a cheese monster and sometimes I just don't know when to stop.

I washed and chopped the leftover romaine for SP. I'm not quite ready to eat fresh lettuce again after the tummy distress last week. He used some of the leftover poppyseed dressing on his romaine.

We grilled last week's CSA zucchini and the leftover chopped onion. We also grilled one HUGE chicken breast that we split and we still had a bit leftover.
I even tried to have just a bit of BBQ sauce - I didn't dip my chicken in extra BBQ, just ate it with the BBQ SP put on it.

I must confess that when I settled on the couch to watch TV, I indulged in a chocolate Klondike. I'd been thinking about Klondikes all day and I just couldn't get them out of my mind. In my defense, Monday evening's dessert was a bowlful of blueberries, strawberries, and blackberries. Oh wait, Monday afternoon my friend L visited and she brought leftover ice cream pie, which I happily helped her finish... oops. It was homemade vanilla ice cream in a chocolate crumb crust. I certainly couldn't refuse, right? I would have offended her if I rejected her ice cream pie.

OK, no dessert tonight. Just some blueberries. And maybe a wee bit of whipped cream on top.
