Zucchini Frittata

Last night was 'quick dinner' night. Time for one of our favorite quickie meals: frittata. We added sliced zucchini, chives, parmesan, and some cheddar cheese to the eggs. SP made himself some multi-grain toast and I ate one of the leftover biscuits. We decided that this frittata was a bit bland, maybe because we didn't add a ton of cheese and only added zucchini and chives. I didn't think of it in time, but we could have added some sun-dried tomatoes from the jar in the refrigerator, or maybe some kalamata olives, though I remain unsure whether I truly like olives in my eggs. The kalamata/egg combination at The Tomato Head in Knoxville was tasty, but...
