Breaded Chicken, Baked Tomatoes, and Biscuits

It looked like SP might be extra late getting home tonight. It also looked like we might get some rain showers before we could grill our chicken. I debated for about ten minutes, made a decision, and sprang into action: no grilled chicken tonight - I would make breaded chicken, which is one of my favorite foods.

I quickly breaded the three ENORMOUS chicken breasts we had thawing. They were still a wee bit frozen. Dad helped with dinner by picking the ice bits off the chicken!!! My breading method: dip in bread crumbs, dip in egg, dip again in bread crumbs to thoroughly coat in bread crumbs. One of our pantry staples is Progresso Italian bread crumbs, so I used those. I used about 2 eggs for these 3 chicken breasts, which was just about right. Only a smidgen of egg mixture left.

After breading, I browned them in a bit of vegetable oil. After they were browned, I patted them with a paper towel to remove excess oil, transferred them to a foil lined cookie sheet, and put them in the oven for 30 minutes at 375.
Meanwhile, I washed and sliced three tomatoes, arranged them on a foil lined cookie sheet, drizzled olive oil over the slices, sprinkled them with parmesan cheese, and topped the slices with bits of chopped fresh basil. These were put in the oven for about ten minutes.Lastly, I raided the Pillsbury biscuit bag in the freezer. We really need to finish this bag of biscuits so they were a perfect quick side for dinner.
I was so busy trying to get all this together that I forgot to take photos until we were almost done eating!!! These photos show the last 2 biscuits, the last 2 tomato slices, and our leftover chicken tucked away in a casserole dish, ready for tomorrow's dinner!! We each could only eat about half our chicken and, as you can see, some of the breading fell off!!! I thought this was a good dinner - hopefully dad and SP enjoyed it, too.
