Frittata & Salad Night

Last night was quick dinner = frittata night! I am not very good at cooking eggs except hard-boiled eggs, so SP was in charge. I did do all the ingredient gathering & chopping. Broccoli, sun-dried tomatoes, roasted red peppers, carrots, and crumbly cheddar.

We think that's because we used a larger pan since it seemed like we had more goodies than usual to put into it. And it stuck a bit - some of it came out like scrambled eggs instead of a slice of pie! But it was delicious.We must have been hungry because we ate the entire frittata. Usually we get 2 meals from it!

I also washed the CSA mixed greens for a salad. We added dried cranberries, slivered almonds, and the bit of the crumbled cheese that didn't make it into the frittata. A delicious veggie-filled dinner!
