Sour Cream Bundt Cake

Since my mom heads back to Las Vegas very early tomorrow morning, SP's dad invited us over for dinner last night. It's nice that my parents and SP's dad like visiting with each other and get along well.

There were tasty appetizers: cheese, crackers, olives, roasted red peppers, and crab dipped in cocktail sauce. Mmmm. The olives had a bit too much of a kick for me - I popped a whole olive in my mouth, not bothering to ponder just what the red specks were, and since I am a spicy/hot wimp, I quickly started tearing up and requesting water!!

Dinner was rotisserie chicken, pork tenderloin, mushroom & barley soup, cabbage cooked with bacon & vinegar, and potatoes with onions and red pepper. Very tasty.

We offered to take a dessert. We discussed dessert ideas all week. My mom expressed interest in a recipe for 'Sour Cream Bundt Cake' by Dorie Greenspan - it was in Parade Magazine a few weeks ago. So we decided on that recipe and made it Saturday night during trick-or-treat time.

It's very simple: flour, baking powder, salt, butter, sour cream, eggs, vanilla, sugar. We made sure we greased the bundt pan very well - it's not non-stick. Usually I don't worry much if the pan is non-stick. We decided to add the optional dollops of jam and chose strawberry jelly.This cake is quick and easy. It didn't rise as high as we expected (based on other bundt cakes we've made). I think it might be because there's not a ton of ingredients or maybe because it's a denser, thicker batter. We did wonder if somehow in our chocolate-wine-pizza-Halloween haze we forgot to add the baking powder. Sunday morning, after much debate, we cut a slice of the cake to peer at the insides. It looked OK. We put the slice back and sprinkled the cake with powdered sugar. You couldn't see where we sliced!The cake tasted fine - it was quite tasty for such a quick and easy cake. I'd definitely make it with the jam. Strawberry was a good choice but peach or raspberry would be good, too. It's not that I wouldn't make this cake again because it was quite good, it's that I may not make it again because we have so many dessert recipes to still try and so many others that I like more than this one.

It made a tasty breakfast today, too!!!
