Back to Normal

The holidays are over. We dismantled the tree and put away all the holiday decorations. The only cookies left are the ones in the freezer (our personal stash!). My stomach is slowly returning to normal. SP returned to work on Monday. It's time to resume the 'usual routine' and to resume healthier eating. I certainly have not felt very good the past 2 weeks and part of that was the food!So Sunday evening, we sipped some 'Happy New Year' champagne while we made a somewhat 'plain' meal. We roasted a chicken, which is one of our favorite things to do because it's simple and yields lots of leftovers for the week. For seasoning, we did our usual lemon & Argentine salt combination plus we sprinkled on some tarragon.For a vegetable, we steamed fresh cauliflower. Cauliflower is so tasty when it has a cheese sauce covering it, but in the interest of healthier eating and helping my tummy, I simply put some fresh grated pepper on and a very tiny amount of butter.

I ate some nice, boring, plain white rice with my chicken & cauliflower while SP roasted a butternut squash leftover from one of the last CSA boxes.A plain meal, yes, but plain can be tasty and this meal was quite tasty. I feel better already after a good meal of meat, starch, and veggie with no cream or cheese sauce!!!
After dinner, we watched Iron Chef Super Chef Battle with the White House garden goodies as the 'secret ingredient' -- the White House chef teamed with Bobby Flay against Mario Batali & Emeril Lagasse.

  1. I love your picture of the chicken! You both must be seasoned experts and I cannot help but laugh at how mine resembled a chicken that had been run over!

  2. Whitney, if I carved the chicken, it'd end up on the floor or looking like it got run over! SP is very good with his favorite, extra sharp, carving knife! We both thought yours looked fine! Anyway, it's the taste that matters!
