Recent Eats

After the moussaka casserole dish was licked clean Monday evening, we realized we hadn't really planned any other meals for the week. Oops. We pawed through the freezer and pantry in search of dinner ideas and ended up feasting on our usual 'no advance planning required' meals:

Tuesday: Stir Fried Rice

This time we used leftover white and brown rice as well as leftover roast chicken, frozen shrimp, frozen peas, onions, carrots, leftover fresh ginger, eggs, and soy sauce. Yum! Here's the onion and fresh ginger filling the kitchen with a delicious aroma:

Wednesday: Leftover Stir Fry plus Green Beans & Chicken BreastThe chicken breasts we have in the freezer are huge so we split one for dinner. The plan was to simply season it with salt & pepper and bake it, but that seemed kind of bland. I was staring into the refrigerator hoping for inspiration and kind of pondering how balsamic syrup on chicken would taste with stir fried rice when I spied the bottle of Kikkoman Teriyaki Basting Glaze. My mom bought it when she made Maple-Teriyaki Glazed Wings last November. I decided that would taste good with the fried rice, so during the last 10 minutes of baking, I slathered some teriyaki basting glaze on the chicken. We also microwaved some frozen green beans and the leftover stir fried rice.

Thursday: Tilapia, Quinoa, and Green Beans
Sound familiar? Yes, just last week we made Balsamic Glazed Tilapia & Herbed Quinoa. We made it again this past Thursday and for our veggie we finished the bag of frozen green beans. No photos since I just posted photos of these dishes last week.

Friday: Leftover Tilapia, Ravioli, Cheese Sticks
Friday's dinner was random. SP finished the tilapia and quinoa. I ate some of the Rosetto Cheese-Broccoli Ravioli. SP also ate some ravioli. We didn't have any pasta sauce, so we used a bit of melted butter. We didn't have any parmesan, so we grated the romano. We both munched on some cheese sticks, too -- just like last Friday (so again, no photos)!

Not a terribly exciting food week. We emptied out the freezer a bit (tilapia, chicken, vegetables). Tomorrow we are trying another recipe from Cover & Bake and we are hoping it is as tasty as the moussaka was.
