CSA Week #9

Week #9 goodies: one dozen free range eggs, romaine, strawberries, Rome apples, fresh mint, fresh cilantro, salad mix, scallions, curly endive, and beet greens & chard medley. The mint smells so refreshing and invigorating:I can't wait until our mint plant gets larger. Apples and scallions (now I can add the scallions into the fattoush):And more local strawberries! These ones are smaller than last week and there's 18 of these luscious red goodies for SP & I (so there were 36 total).Lots more greens (more salad!) and fresh eggs.A couple of nights ago, we finally used up some CSA kale. We made kale chips:I didn't like them last year, but I tried one anyway and decided they taste better this year. To eat with the kale chips, I made Pork Chops with Mushrooms and Thyme. We made this dish last January and I wrote about it here. That time we ate the pork chops with homemade whole wheat dinner rolls and salad. This time, I roasted some potatoes with olive oil, salt, pepper, and rosemary. The potatoes were a mix of CSA potatoes and store bought ones - they were sprouting some impressive eyes so I peeled them. For another veggie side dish, I used up a bag of store bought carrots by steaming them.
