Pasta Salad

Last weekend, in addition to our vegetarian meal, we made a pasta salad. Pasta salad can be vegetarian, but we added a grilled and cubed chicken breast. In addition to the chicken and bow tie pasta, our pasta salad had: tomatoes, sun-dried tomatoes, artichokes, kalamata olives, green olives, cucumber, fresh basil, parmesan cheese, roasted red pepper, and our usual homemade dressing.

A perfect meal for these hot, 90+ degree days: a cold meal, no cooking required.
