Smoked Gouda Grilled Cheese

Friday evening, I got very, very hungry while waiting for SP to get home. We hadn't planned anything for dinner, there were no leftovers to reheat -- most likely dinner was going to end up being toast and scrambled eggs. However, my egg scrambling skills stink; I always make SP scramble eggs and he wasn't home.

So I decided to make myself a smoked gouda grilled cheese on Pepperidge Farm 15 Grain bread. Quite some time ago we bought a huge hunk of smoked gouda at Costco and there was still some left, so I sliced some, sandwiched the cheese between 2 slices of buttered bread, and slowly grilled it on the griddle.Cooking it slowly is the key to delicious grilled cheese. This one was deliciously cheesy and golden brown and comforting, although I kind of wished we had some apples to slice and add to the grilled cheese. When SP finally got home, I made him one, too.

  1. Yum yum is right. Gouda makes a fantastic pairing cheese - apple slices, pear slices, fresh tomato, just about anything. That is, if you have more restraint than myself and can resist just sitting down and eating a block of it with crusty bread.
