Vegetable Soup

I mentioned in the 'Thanksgiving on Halloween' post that I chopped a lot of vegetables on Sunday and that some weren't for the Thanksgiving dinner. Some of the chopped vegetables were for Vegetable Soup.

We don't follow a recipe when we make vegetable soup. We use our medium sized crock pot, a can of crushed tomatoes, chicken stock, and whatever amount of assorted veggies that looks good! This time we used potatoes, carrots, parsnips, celery, green beans, frozen peas, and onions. We put everything is in the crock pot and then let it simmer away all day (or until all the veggies are softened).

With our soup, we've been enjoying an Olive Baguette from Giant Eagle Market District.We've been warming it up in the oven to make it crispy and then dipping it in our soup. It has a delicious olive tang to it.

Vegetable soup: tasty, easy, full of healthy vegetables, and good for warming up on these chilly nights!
