Recently EPAS told me she was making a roast beef. For some reason, this really set off a roast craving! I rarely eat beef at home because SP doesn't eat beef -- if I do eat it at home, it's me eating beef burgers or ground beef tacos while he uses ground turkey. It's kind of a pain to prepare 2 kinds of burgers/tacos.
But I REALLY wanted mom's hot roast beef & mushroom gravy sandwiches. So I asked her to make it and she did! She cooked the roast beef with mushrooms, made mushroom gravy, and SP sliced the beef (he will handle beef, he just won't eat it; he ate some turkey chili from the freezer while we enjoyed the beef).


SP and I made the Pork Tenderloin with Roasted Root Vegetables last Sunday. We make this a lot because we really like the pork marinade - the fresh ginger and honey and soy with red wine - yum!!! We got 2 dinners from this as well. For the roasted veggies, we roasted potatoes, onions, and carrots sprinkled with rosemary and also cooked some frozen green beans for extra vegetable.
