Dirty Risotto

Even though we were still stuffed from our brunch at Eleven, we cooked Sunday night dinner anyway and just ate smaller portions than we normally would. Our choice for Sunday dinner/leftovers for the week: Dirty Risotto.Dirty Risotto is a Giada recipe but I think what inspired us to first make this dish over a year ago was Brown Eyed Baker's post about her modified version of Giada's Dirty Risotto. Here's my Dirty Risotto post from October 2009 (and I see we made Citrus Biscotti that day, too -- now I am craving citrus biscotti!). We chose this recipe because all we had to buy was the red pepper and the mushrooms. We had all the other ingredients in the freezer or pantry. I like dishes that use up foods we nearly forget are in the freezer (the sausage)!I didn't help make this meal. I had some sinus issues and I was full of tasty brunch food, so I spent Sunday afternoon napping/reading the newspaper/watching football games. SP napped/read/watched TV with me, but apparently, I was snoozing away when he got up to start dinner and he didn't want to disturb me. I woke up in time to snap a few photos before sitting down to dinner. He made a mighty tasty risotto with sausage, red pepper, mushrooms, onions, and parmesan cheese.Tasty, comforting, warming, and enough food for two additional meals during the week.
