Vegetable Soup

We've been eating leftover Super Bowl food this week and feeling a little not-so-healthy. The solution to counteract the dips and chips and cake: vegetable soup for dinner. We made a huge pot of soup last Sunday and have been alternating it with Super Bowl food leftovers for dinner this week. This time our veggie soup includes potatoes, celery, carrots, onion, green beans, leftover cabbage from the yakisoba, a can of tomatoes, thyme, parsley, bay leaves, pepper, chicken stock... I think that's it! The soup was 'chunkier' than usual, but that's OK. Plus, hot soup tastes really good and warms you up on these freezing cold evenings. A lows of 7 with windchill of -8??? That's what the news told me to expect one morning this week. Brrrrr!
