Taco Nights

This week, Wednesday & Thursday nights were homemade tacos for dinner nights. Tacos always seem so easy, and they are, and they're quick, but the clean up is always a pain. Lots of spoons, knives, containers, lids, etc. Someday I will remember to just pile all the goodies on one platter for simpler clean up! Here's how taco dinner night looked:I broke the shells and put them on the bottom of the plate. Then I piled on the chicken, shredded cheddar cheese, tomato, cucumber, black olives, lettuce/watercress (from the CSA), additional seasoning (for SP's chicken; I like mildly seasoned, wimpy tacos), some feta (from the CSA; we wanted to eat it before it went bad), corn shells for me (whole wheat for SP), sour cream & taco sauce, quick guacamole (mashed avocado with lime juice).

In spite of not being a huge Mexican food fan, I do really enjoy our homemade tacos. Unfortunately, after 4 of 5 days eating Mexican (Mad Mex 2 nights, homemade tacos 2 nights), my stomach was not too happy! I told SP no more Mexican for at least 3 months!
