Mustard Tarragon Chicken

We received fresh tarragon in CSA #8. We were excited because we have a chicken dish we really like that uses tarragon and we aren't growing tarragon out on the deck. So last Wednesday, I made Mustard-Tarragon Chicken Saute.We've made this dish before. It's one of our favorites, quick, and easy. It's an April 2002 Bon Appetit recipe (recipe here) and I've blogged about it before here. The sauce is so yummy and the rice always tastes extra yummy when the sauce is spooned over it. It tasted really good with the fresh tarragon! Plus, I made enough chicken and rice for another meal, and it's always nice to just have to re-heat something for dinner.
