Shrimp & Arugula Risotto

We discovered that our bag of arborio rice has a 'Best By' date that is very, very soon. So this past weekend we made risotto.

Risotto has a reputation of being difficult, and I can't say I agree that it's difficult, but it is time consuming, and sometimes, no matter how carefully you tend to it, the risotto just isn't quite right. Fortunately, we had terrific results with this Shrimp & Arugula Risotto recipe.
This turned out creamy and delicious. The large shrimp were just the right size. There's no 'cheat' of adding cream or mascarpone at the end to achieve creaminess, but you do add some parmesan and butter at the end. I think this was the best risotto we've ever made, even better than the Asparagus Risotto.

Definitely a 'make again' dish.
