Homemade Chocolate Pudding


I've never much liked pudding. Maybe because growing up, we always made instant pudding. It was good, but never great. It was just... there. But then a couple weeks ago, we made homemade pudding and oh my gosh - so good! Richer, creamier, smoother, thicker, more chocolaty. It's a little time consuming, but worth it. It's similar to making ice cream custard.
A cool treat on warm evenings. I need to keep pudding in mind for a quick and easy dessert to whip up - it might take less time than simple cookies and we always have the ingredients on hand. This time, we were lucky enough to have fresh eggs from my friend T. We topped our delicious pudding with whipped cream swirls, but since I was only photographing it one morning, not eating it, I didn't bother with the whipped cream.
For our first pudding attempt, we used a Vanilla Pudding recipe from Better Homes & Gardens New Cook Book 1989. To make it chocolate pudding, we added 1/3 cup cocoa powder to the sugar, used 2 tablespoons cornstarch, and 2 & 2/3 c whole milk.
