Pimiento Cheese BLT

When one of my food magazines arrives, the first thing I do is flip through and remove all those annoying subscription cards. The next thing I do is glance at the recipe index. Sometimes if something sounds really good, I'll flip right to it instead of waiting until I get to that part of the magazine. That happened with the October issue of Bon Appetit.
Pimiento BLT? Oh yes. Yes. Yes. YES. Pimiento cheese is one of my favorite things, but it's cheese and mayo. That means the Food Police -er, my loving husband, SP, doesn't let me eat it very often. He also frowns upon excessive bacon consumption. Thankfully, he's given up trying to pass off that turkey bacon as real bacon.

Anyway, as luck would have it, he had plans one night after work, which meant that I would be on my own for dinner. He asked me what I wanted him to buy me at the store for my dinner that night. My face lit up. He got a suspicious, worried look on his face. I grabbed the magazine, flipped to the recipe, and showed him.
He started laughing. Shook his head. Maybe rolled his eyes. Then he got this look. I braced myself for the lecture. To my surprise, he said,"Yes. That sounds good. Maybe that could also be my dinner one night? And you could eat it twice for dinner? One night of cheese and mayo and bacon isn't so bad." DONE.

Here's the thing: SP likes to eat healthy and he truly loves his brown rice and quinoa and huge plates of green vegetables BUT he also really likes pimiento cheese and bacon (and ice cream and cookies and pasta and cream sauces). All things in moderation. He's just better at moderation than I am!
The Bon Appetit recipe was just an inspiration. We didn't really follow it. Instead, we made our favorite pimiento cheese: Grandma Knowlton's Pimiento Cheese. We used a loaf of French Batard from Market District. We fried our bacon on Sunday, blotted as much grease as possible off it, and stored it in the refrigerator in a plastic container. Tomatoes and mixed greens from Market District.

It was so tasty! Cheese (extra sharp cheddar), bacon, pimiento, white bread, tomato - it's such an amazing sandwich combination. The mixed greens were pretty good, too. Definitely a make again sandwich.
