Red Potato & Green Bean Salad

One of our favorite side dishes, and one of the first dishes we made together after we moved in together, is Red Potato & Green Bean Salad with Dijon Vinaigrette. I've had this recipe for ages - it's from the August 2002 issue of Bon Appetit. An old recipe, but a delicious recipe. A great side dish for with ribs or chicken or hamburgers.
We used green beans from our garden and bought some green beans as well. This is a super easy dish but it takes a bit of time because you need to boil the potatoes and blanch the green beans. We usually use more green beans than the recipe calls for to make sure we have enough veggie with our meal.

It's a nice variation on potato salad and makes a lot - maybe too much for just the two of us since we couldn't finish it in a week. Next time, I think we'll halve the recipe. We used to be able to finish it in a week, but lately, we've both been trying to cut back and have smaller portions. We were (are) getting a little... pudgy in the tummy area!
