Homemade Sloppy Joes

Last week I had a lot of Super Bowl food cravings. I wanted everything. Nachos. Tacos. Pulled Pork. Wings. Buffalo Chicken Dip. Homemade pizza. Braised BBQ Brisket. Meatball Sub. Cheese everything. The dinner dish that won (got picked by SP from my list of possibilities) was Homemade Sloppy Joes.
Until now, my idea of sloppy joes was a can of Manwich mixed with ground beef and served on an untoasted squishy white bun with cheese on top. SP has never been a fan of Manwich and I'm no longer a fan of foods like Manwich so in the 7 years we've been together, we've never made sloppy joes. Not until we decided to try making a homemade version.

I'm so glad we made these because they were so good - so much tastier than Manwich. This is a pretty quick meal to make, too. I found 2 recipes online for reference/inspiration, one from Pioneer Woman and one from Brown Eyed Baker. Our version ended up closer to the recipe from Pioneer Woman but we used a little more ketchup, more green pepper, a little less chili powder, no red pepper flakes, and no garlic. I liked the addition of dry mustard and Worcestershire. And we added the optional tomato paste.
The green pepper and onion gave a nice crunchy bite to the sandwich. We bought  a heartier bun than my usual squishy white bun and toasted it, something I've never done before for a sloppy joe sandwich. I am now a huge fan of toasted bun. And, of course, we topped the sloppy joe mixture with shredded cheddar cheese.
We both really enjoyed our homemade sloppy joe sandwiches. SP likes a little more heat so he plans to sprinkle some red pepper flakes on his leftover sandwiches this week. I like it just the way it is.
