Lamb Burgers with Red Pepper-Feta Sauce

Last weekend we grilled lamb burgers. I've been wanting to try them with this roasted red pepper-feta sauce ever since I saw it in The Make Ahead Cook from America's Test Kitchen last November.
But I had to wait for grilling season because grilled is the only way I like homemade burgers. Yes, I'm picky about my burgers. 
Officially, the recipe is Lamb Pitas w/Roasted Red Pepper Sauce, but we didn't use pita and we didn't make smallish burgers. Nor did we use jarred roasted red peppers.
Basically, the recipe just inspired us to make lamb burgers with a roasted red pepper & feta sauce for on top. We roasted fresh red peppers on the grill and then blended them with some feta cheese. For the burgers, we added some onion, lemon juice & zest, bread crumbs, dried oregano, and dried parsley to the ground lamb and made 4 patties.
I knew the sauce would make for a messy sandwich, so I ate mine with a knife and fork. The sauce was so good. Of course we plopped extra feta on top. We ate some sliced tomato & arugula on the side.
I liked this much more than lamb burgers with yogurt sauce. The salty & crumbly feta chunks, cool & smooth roasted red peppers & feta sauce, the lemon and herb flavor in the lamb, plus the peppery arugula on the side - so good. I ate a lot of the sauce - it's a great dipping sauce for the Italian bread we used.

This also would be a great dipping sauce for veggies.

Our version:

Sauce:
1/2 cup roasted red pepper
1/4 cup feta cheese
salt & pepper to taste

Blend together in food processor/blender/Magic Bullet.

Burgers:
1 lb ground lamb
half a small onion, chopped
dried parsley
dried oregano
1-2 tbsp bread crumbs
juice and zest from half a lemon
salt & pepper

For sandwich:
bread or bun
tomato, sliced
arugula

Mix burger ingredients together, form into patties, and cook. Serve on bun or bread with sauce and extra feta. Add tomato and arugula to sandwich or serve on side.
