Way back over the 4th of July weekend, we decided to grill burgers and to make things a little more exciting, we decided to try these Zucchini Pickles alongside our burgers. We had just picked our first garden zucchini so that one was turned into pickles.
Of course as we were pickling the zucchini, we discovered we didn't have any apple cider vinegar. Kind of an essential ingredient for pickling! After a quick trip down the hill to GEMD, we were back in business.
Fennel, sugar, peppercorns, salt, bay leaf, red pepper flakes, and apple cider vinegar, heated, and then poured over the zucchini & fresh oregano.
We ate them over the next week. Well, SP did. Turns out he loves zucchini pickles but me, not so much. I could taste the fennel and vinegar but the zucchini wasn't as crisp as I had expected and I didn't really like the texture of the zucchini rounds. SP thought they were wonderful and plans to make them again. I think I simply prefer my zucchini cooked while SP likes it raw, cooked, and pickled.
