Buttermilk Waffles

Remember the buttermilk? Well it reached the "sell by" date. We didn't want to hold onto it for too much longer so yesterday we made waffles (not pancakes like we originally planned). By we, I mean SP.
Making waffles on Sunday morning was spur of the moment, especially since we slept in until 10 am so it was a little late for a larger than normal breakfast. I decided to shower right away but towards the end of my shower, I could smell food. I thought maybe SP was cooking my lunch turkey, but it smelled more like a baked good. When I opened the door, it smelled really yummy and SP surprised me with Buttermilk Waffles.
Waffles are easy to make, they just take a bit more time than toasting a slice of bread or eating a piece of fruit. Flour, butter, eggs, vanilla, sugar, buttermilk, baking soda & powder, and salt. My waffle maker is old. Very old. Like around 20 years old! But it still works and it still makes yummy waffles.
This made many more waffles than we can eat in one morning. Fortunately, waffles can be wrapped and frozen.
These were delicious. I really like the vanilla and buttermilk flavors. For syrup, we used our bottle of Bourbon Maple Syrup that we got as a holiday gift. I would definitely makes these again. Our previous favorite waffle was a waffle made with yeast, but that takes planning & time. This waffle can be more spur of the moment and instant waffle gratification.
Recipe here.

*Note: we used all purpose flour; we did not use pecan meal or almond flour; we used unsalted butter and 1 tbsp sugar.
