Tortellini Pasta Salad

I still subscribe to Food Network Magazine and enjoy reading it although I rarely rip out recipes to save. In my experience, my taste buds never think the recipes from the Food Network Kitchen are all that great. The recipes from the "celebrity" chefs, yes, but for some reason, not the FNK. There is an exception: this Tortellini Caprese Salad recipe. It's so simple that you don't need a recipe. I just had never thought to make a cold pasta salad from tortellini. So thanks for the idea, FNK.
Cheese tortellini. Tomatoes. Fresh mozzarella. Fresh basil. Dressing of olive oil & white balsamic vinegar. Salt & pepper. The ingredient amounts? Whatever your personal taste is. We like a lot of basil and a lot of tomato. You could use a different dressing, or change the ratio of olive oil to vinegar to suit your personal taste.
This is really good. Really good. Like we can't stop eating it good. I've been snacking on a few spoonfuls during the day. The white balsamic is barely noticeable, just a hint of it, which is nice. In spite of cheese-filled pasta, this dish feels light and summery. We've been eating it on the side with our hamburgers and hot dogs. SP bought dried cheese-filled tortellini in the dried pasta aisle. I thought he was going to buy it from the freezer, like a package of Rosetto, or one of those Buitoni packages. I was skeptical of dried tortellini but I shouldn't have been. It's very tasty.

We'll definitely make this again.
