Chicken Agrodolce

We're always looking for new ways to cook chicken. This one is from Giada in Italy. She calls it Chicken Agrodolce. I call it Honey Balsamic Chicken. There's only one photo from when we made this chicken - whoops!

Basically, season chicken with salt and then brown it in olive oil in oven-proof skillet. Once browned, add honey, balsamic vinegar, and thyme to skillet. Swirl to mix and flip chicken around in sauce until coated. Place the skillet in a 375 degree oven and bake until chicken is done (160 degrees). Remove the chicken from the pan and let it rest while you simmer the sauce for a bit and then add some butter to the sauce. Pour sauce over chicken.

Easy. Quick. Delicious.

We ate the chicken with Grilled Zucchini with Red Pepper Sauce.
