Cheddar Cheese Coins

This is the only photo I have of the Cheddar Cheese Coins we made a couple weeks ago. They didn't last long! They were posted in America's Test Kitchen's Instagram feed one day last December along with a link to the recipe.

These crackers are yummy! Cheesy and a nice flavor from the paprika & cayenne. They're easy to make and a lot fit on the baking sheet so it doesn't take too long to bake them. Just make sure to bake them long enough so they're crispy & like crackers. Ours were baked enough but could have used a bit longer to get even crispier. There's also a version that uses sesame seeds and poppy seeds and gruyere instead of cheddar - I want to try that next.
